Graydon, A few title come to mind - the first one is of course Schneier's Applied Cryptography, which is a good all-round overview of cryptography. Then there is Stinson's Cryptography: Theory and practice. A good overview of security in general is Ross Anderson's Security Engineering - it's not focused on cryptography in particular, but it contains the basics of symmetric ciphers and public-key crypto.
