Honestly, if you're set on using gmail, the safest way is to use POP3 to retrieve your mail and do all of the encrypting and decrypting locally. http://zricks.home.comcast.net/2004/12/gmail-pgp-and-end-to-end-solution.html has an explanation on how to do it using Thunderbird.
