I use it and I support it.  I am including a link to a posting on our forums which chronicle the installation, testing 
and results of one of our users who is protecting more than 1600 users behind his Untangle server.

He is not the only installation with more than 1000 users.  We do recommend that you support the larger installations 
with a 2-3GB RAM and a disk that is 120GB or above to support the operational needs.

I think that part of the presentation is because Untangle has been geared toward small business, who are often 
neglected and who are more often than not scared by less friendly interfaces.
