Simplest way to deal with it, IMHO :

Configure a firewall so that every incoming connection will be
redirected to your DMZ (2) (with nat firewall rules if you do not have
many public addresses).
Then authorize machines on your private network (3) to access both the
Internet (1) and your Linux servers (2).

Set up a full user management system (based on Unix user accounts,
LDAP, ...) then a nfs+kerberos or ssh+ftp daemon, which will guarante
that every user is authenticated. You may also play with unix rights to
set up a complex access ruleset.

Hello,

We have 2 Linux machines (CentOS) which are accessed from outside by one 
of our clients. The rest of our network is Windows machines.
We do not use domains, for now. (small network)

What is the best way to make those clients access only the machines they 
need to work and no other computer on the network?

They have administrator rights on the Linux machines.
