Exchange 2007 and smart phone encryption

Has anyone here used Exchange 2007 to encrypt their Smartphones? If so, can you give me any pointers on what to expect if we were to turn this feature on at the server. I imagine that it just starts encrypting all the phones as they connect to the server to get their mail. Is it only windows mobile 5+ devices that are encrypted or does it also encrypt devices with other operating systems like the iPhone? I've searched on the internet and asked a couple other groups but can't seem to find any good information on what to expect.
