For security audits, we have very successfully used VMWare under NT4 & Win2k to boot Linux and run nmap - and it works like a dream!
I agree, I just finished an audit where I used vmWare on Linux to host NT (which is opposite your config). Worked well, except when I was performing a class B nmap in linux while running l0phtcrack on 5500 hashes on the NT side, all on 64 megs of RAM. ;) I did have problems getting Cybercop to behave under vmWare though, but I think that was more a user error. ;) (use of Cybercop was in the scope, and I only used it to quantify the needless amount of paperwork those types of scanners produce. 14 hosts => 198 pages of report.
