Not at the IP level, but the MAC is available through querying higher
level protocols.


Yes. Fortunately though, nmap doesn't handle Cisco's (or any other 
vendors, for that matter) proprietary protocols. Since the question 
regarded nmap use, the answer is still valid (except that it masks the 
*source* MAC address. The destination MAC is determined by the switch, 
or not at all if a hub is used).
