Many resources are available online dedicated to this topic. I suggest
reading the RFC's for the specific protocols that you would like to learn;
they should provide the necessary level of depth needed. Once you have a
more in-depth understanding of the protocol, tools such as tcpdump are great
for analyzing the traffic of said protocol. Use tcpdump or something like
hping to view the raw protocol data - this will give you excellent material
to learn about the actual real-world implementation of whatever traffic you
wish to learn.

http://www.rfc.net/ -more information on TCP/IP, protocols, and security
technologies than you could ever ingest in a lifetime.

I'm not a professional in any sense of the word, I just toy with
technology out of love. I have yet to find a good tutorial or
instruction manual on how to use TCP/IP or many of the other
technologies used in security and the internet. While I'm sure they
exist, I simply haven't stumbled across them yet. It took me several
tries with Google to find an explanation of SMTP; even then it wasn't
obvious from the search results. Perhaps if somebody would make a
website or (inexpensive) book dedicated to topics such as these, more
geeks/professionals would have a knowledge of it.

And that concludes my outsider's view. :)
