Strange snort behaviour, failure to log all traffic - Solved.

The only thing I didn't try, because it didn't occur to me, was to
reboot the machine.

It had been up so long the uptime clock had wrapped around, and was
half way through again (over 2 years). I don't know if that had
anything to do with it.

I rebooted the machine, and snort is working fine now.
