There are two free tools at http://portswigger.net that you can use. Both are java-based and will run in windows or unix: - sock is a simple tool which allows a single HTTP request to be manipulated and re-issued repeatedly from the same window. Each response can be viewed as plain text or rendered as a web page, and can be searched for keywords. Sock supports SSL, and keeps a history of all requests and responses. - burp proxy is an interactive HTTP/S proxy which allows you to intercept, inspect and modify the raw traffic passing in both directions. Features include: both text and hex-editing of intercepted traffic, so even binary data can be manipulated; full history of all requests and modifications, with ability to reissue and re-modify individual requests; and automatic update of Content-Length header in modified messages.
