Early on it was necessary because the GTK+ printing system was primitive. However, the current versions of GTK+ and Qt both offer high-level printing APIs that should be able to generate PostScript, PDF and other output formats for us.
If there's a better way, then we should probably take advantage of it. Maybe file a bug report for it though as this is probably not a high priority item judging by the fact that this bug has been around for over 2 years now, so it doesn't seem like a lot of people are generating PostScript output or it would have been noticed before now.
