There are many options mentioned so far but none of these really
"protect" the server they just relay things backwards and forwards,

I use "GFI MailSecurity" ( http://www.gfi.com/mailsecurity/ ) which will
not only prevent viruses and prohibited attachements getting through, it
will also prevent a variety of exploits against the exchange server.

An open source application wuld certainly be cheaper and preferred in my
opinion but as yet I dont currently know of anything that provides all
this for exchange.
