If your concern is resources being "eaten up" on the server, why not consider an antivirus gateway sitting in front of 
these critical servers to filter viruses that are targeted at them. Implement a policy where it requires staff to 
manually scan files before they are allowed to be physically introduced (by floppies, flash drives, external hard 
disks, etc) to these servers.
This should serve to reduce the chances of viruses being introduced to these servers while at the same time meeting 
your requirement of not having AV running on the server.
