  Besides the cost, there's the challenge of coordinating policies and
management across multiple platforms.

  Yes, there are arguments that this is a "more secure" approach.  But
relatively few organizations have security needs so stringent that they
trump budget considerations.  So:  If your organization needs security and
can afford any amount to achieve it, do this.  But for most, multiple
interfaces on one good box (or a redundant pair for failover) will be good
enough and more affordable.
