Or even a PC on the local lan with it's TX line cut?
That way no one will know it is there, but all (well, most, if using
UDP) log messages in the form of UDP packets could be logged.

Anyone monitoring the local lan (sic) will see logging data.

Tapping a dedicated serial line from a remote machine is *much* more
difficult than monitoring a LAN from a remote machine.

How many password sniffers have you ever seen running on a dedicated
serial line?

(The pedant in me forces to point out the similarity betweeen a local
lan and a PIN number  8-)
