Yes, you're probably right.

That will get everything except for some icons and pixmaps in
/usr/local/share/icons and /usr/local/share/pixmaps. I looked at the
%files section of zenmap.spec.in (the RPM package specification) to see
the complete list of what gets installed.

But doing the "sudo uninstall_zenmap" you mentioned will get everything?

Yes, that should get everything.
